An easy, festive Valentine’s Day dessert
Rice Krispie treats are always a hit in my house. This version is great for any holiday because they’re just so fun and festive. I hadn’t made the rice krispie pops for awhile, so I thought it would be a nice surprise.
Ingredients:
- 6 cups Rice Krispies
- 1 10-oz. package of regular-size marshmallows or 4 cups miniature marshmallows
- 3 tablespoons butter
- 1 tablespoon shortening (optional)
- 12-oz. bag of pink candy melts
- 25 red candy melts
- 25 white candy melts
- Lollipop sticks
Steps to Make
- In a large microwaveable-safe bowl, heat marshmallows and butter at high for 3 minutes, stirring about every 45 seconds. Stir until the mixture is smooth.
- Add Rice Krispie’s cereal. Stir until well coated.
- Using buttered spatula, or wax paper, evenly press mixture into a 13 x 9 x 2-inch pan coated with cooking spray. Or line the pan with parchment paper. Set for at least 30 minutes.
- Using a serrated knife, cut the Rice Krispie treats into rectangles and place onto wax paper.
- Heat the pink candy melts in a microwave safe container, following the package directions, until it is melted and smooth. I usually heat the melts in a mug since I want the container to be a little deeper, but not very wide for bars. I also usually add a tablespoon of shortening to thin the mixture. I wait until the candy melts are mostly melted before adding the shortening.
- Dip about an 1 1/2 inch of the stick into the melted pink chocolate mixture and then press it into the bottom of the treat. This will help keep the stick from falling out of the treat.
- Dip the Rice Krispie bar a third or half way into the melted chocolate and place the treat on wax paper. Let stand at room temperature for about 10 minutes (or until the chocolate is partially set).
- Place 25 of each colored wafer into Wilton disposable decorating bags. If you don’t have Wilton bags, you can use Ziplock bags as they are microwaveable. I’m not sure whether other brands are, but you can reference the packaging. I don’t put anything in the decorating bag other than the wafers (no decorating tips).
- Place the bags of wafers, one at a time, in a mug (to hold the bag upright) and microwave at 30 second intervals at 50% power. Press the bag to mix the wafers between each interval. You may have to use a towel if it is too hot.
- Once the candy melts are melted, cut the VERY tip of the bag off. Be careful to only cut a teeny bit off. This makes a hole that you’ll use to drizzle the chocolate over your Rice Krispie Pop. You can always make the hole bigger, but you can’t make it smaller. So start small to test the drizzle.
- Drizzle each treat with the red and white melted chocolate, using the decorating bags. Let finished treat bar pops stand for 2 hours at room temperature to set.
I love Rice Krispie treats any way you make them. These Rice Krispie pops are especially cute as a Valentine’s Day school treat.
